Marvin explains that Shady Maple’s niche lies in its specialties that have been developed to meet what people have come to expect of Shady Maple: “The basics: meat, vegetables, potatoes.’ “We can’t give them enough praise.’Ĭonsistency, superior quality, and presentation notwithstanding, Shady Maple has had to develop its own market niche in a region famous for smorgasbords and family-style dining. “Without our mangers, we wouldn’t survive,’ says Marvin candidly. With their management team, Marvin and Miriam make the overall operation work six days a week. Over the 15 years that the smorgasbord has been attracting people from four states and beyond, consistency in management has played a major role in the Weaver family’s ability to set and maintain high operating standards. For food, we serve only the highest quality.’ “For service, we set the standards as high as we can. “Our customer is the most important thing we have,’ says Marvin Weaver, who with his wife Miriam, own and run both the Shady Maple Smorgasbord and the Shady Maple Farm Market. While presentation is a major factor to success in the restaurant/hospitality industry, it doesn’t get in the way of Shady Maple’s well-known reputation for personable service. Then there’s the grill area where short order cooks prepare breakfast items such as Belgian waffles, scrapple, ham, bacon, and eggs and omelets, just the way a customer wants them. The Pennsylvania Dutch-style food, prepared in Shady Maple’s 12,000 square-foot state-of-the-art kitchen, is presented along a 200-foot long buffet food line that includes salad bars, dessert bars, as well as tempting beef, chicken, turkey, fish, vegetables, and fruits all displayed on hot tables attractively trimmed with brass. Once shown to a table or a booth, the true Shady Maple Smorgasbord experience begins. To the left is a blazing fireplace and around the lobby are comfortable sofas and chairs that can help make the sometime 30- to 45-minute wait on busy days a bit more tolerable. What began in 1985 as a 250-seat restaurant operating in 7,500 square feet of space, Shady Maple le Smorgasbord is now a magnificent landmark that can seat up to 1,200 people in a carefully designed building that consists of 110,000 square feet.Įnter the main lobby, ad an inviting and relaxing decor of pastel burgundies, hunter greens, brass chandeliers, wall sconces, recessed lighting, rich maple woodwork, and a liberal use of green plants greet the hungry and sometimes weary visitor to this famous destination.
